GReat Kouzina! #GReatKouzina OLD TIMES Lemon, carrot and olive preserve MARKEZINIS THEODOTOS Ingredients for 4 prs 6 lemons 250 gr sugar 250 gr glucose 2 gr vanilla 650 ml water To make the carrot preserve: 250 gr carrots from Thiva 250 gr sugar 250 ml water 2 gr vanilla 5 cloves 1 cinnamon stick To make the stuffed olive preserve: 250 gr olives, pit removed 200 gr blanched almonds 250 gr sugar 250 ml water 4-5 basil leaves Cloves Directions: To make the lemon preserve: Rub the outer surface of the lemons on a grater, to remove the yellow part. Remove the peel and then cut it into slices. Stabilize it with a toothpick. Boil in water, changing the water three times, to remove the bitterness. Put in a saucepan the water, glucose, water and simmer for 5 minutes. Add the lemon strips and boil for 15 more minutes, until the syrup thickens. To make the carrot preserve: Peel the carrots and boil for 15 minutes. Put in a saucepan the water, sugar, cloves, cinnamon and boil for 10 minutes. Add the carrots and simmer for 20 minutes. To make the stuffed olives preserve: Soak the olives in water for 12 hours. In this time frame change the water 2-3 times. Drain the olives and stuff them with the almonds. If needed, cut the almonds into smaller pieces. Put in a saucepan the water, sugar, cloves and bring to a boil. Add the stuffed olives and boil for 20-25 minutes. Remove the saucepan from the heat and add the basil leaves. Serve with sesame bars, yogurt mousse and honey. Δείτε λιγότερα
